As I have played with Google Sites I have found that it has a lot of the same characteristics as the wiki...and lots of similar widgets to use as well. You mentioned how you thought that a wiki might be better suited for one of your classes...you could create the wiki and link it off your Google Sites page. I think you can set up a blog through a Google Site too if you're looking for more of that collaboration to take place within the site. I myself do like the wiki better for collaboration...but then again it's what I learned first so there is some bias there.
